fattoush (salad)

the fattoush my way
this was quite easy to make i admit .., as the ingredients were handy , just a little  off  from radish bcoz i never liked radish in my plate  .., but everything is great in this recipe , and a must try .. ! this was made in the month of ramadan  as i really wanted my family to have something healthy and refreshing  ! so here goes the recipe .serves:2
ingredients:
-lettuce chopped (any) -1 cup
- tomatoes chopped- 1/2 cup
-cucumber chopped -1/2 cup
-finely chopped parsley - 2 tbsp
-mint chopped - 1 tsp
-fresh lemon juice - 2-3 tbsp or 1/2 lemon
-feta  cheese chopped- 1/4 cup
-orange pepper(capsicum) chopped- 2-3 tbsp
-sumac powder - 1/4 tsp
-pita chips or pita bread (toasted)- 1/4 cup
-extra virgin olive oil - 4-5 tbsp .

METHOD:
-in a bowl mix in all the vege's and keep aside ,
- now make a dressing with lemon juice,sumac powder, olive oil, black pepper,and salt .
-now add it in the veges ; and mix together ,
-lastly add  the toasted pita and serve ...
goes great with any main course as its ever refreshing .

mini fatayer (mini stuffed breads) best bakes i ever made










uhh... they are my best bakes so far...and i can say it again  these are my favourite bakes , simply because i have made them several times, easy to make em' .,no hard rules, and the best part is you can make them with your kids.,jokes apart ..i made them with my 2 girls age 4 &6 , and they just loved giving the shapes their names ...dont just let this go  ,,,but go ahead and try making them on a free weekend ., i know u will love them ..


INGREDIENTS:
flour -4 cups
instant yeast - 3  1/2 tsp or 11 gram sachet
oil - 1/2 cup
warm water - 1 1/2 cup and lil extra if needed
salt -1/2 tsp
sugar- 1 tbsp
METHOD:
- dissolve yeast in warm water , set aside for 5 mins
- in a plastic bowl  add in the flour, salt, sugar, and oil  .
- now slowly add water into it and knead a dough . add little or less water as desired to make a nice dough (not sticky dough) u may or not need too much extra water .
-sprinkle lil flour in the plastic bowl in which u had knead the dough and  keep it covered with a cloth on it , for almost 1 to 1 1/2 hours . (keep in warm place has the dough will rise quickly ) like a oven.
-now after 1 1/2 hours get it out, punch out all the air and again knead a dough
- cut this dough into 3 parts as it will be easy to roll and get desired shape .
preheat oven to 200* 4 -5mins
BAKE 200 * for 10-12 mins

for making gift boxes - just roll down the dough and cut into long rectangle shape, cut 2-3 cm like shown in above pic and just add ur desired filling like cheese , chocolate, meat fillings etc,  fold them from 2 side and just adjust them from behind , it easily takes the shape u give it.  just cut a thin slice of dough to add on the gift box , put it on it and there u go .....,

cinnabons (the best ever )




cinnabons ..., these re the best cinnabons i have ever had.., its sooo good , u need 2 make em' to believe them'..i dont wanna go gaga ..over it but all i can i say .. u ll love it !!!


ingredients: for cinnaBONS
flour - 4 cups
eggs- 2
butter - 4-5 tbsp (1/4) cup
salt - 1 tsp
sugar - 1/2 cup 
warm milk - 1 cup 
yeast - 2 1/2 tsp (two and half )  


FILLING for the dough (cinnabon) 
soft brown sugar - 1 cup 
butter - 3-4 tbsp 
cinnamon powder - 3 tsp  or little less for p'ple who dont like too much cinnamon .


METHOD: 
- dissolve yeast in warm milk , (NOTE: not hot milk ) as hot liquids kills the yeast property. 
-in a bowl add in all the dough ingredients with the milk mixture and knead a dough .
- dust the bowl with lil flour , and leave it to rise in it covered with a cloth on top. for about 1 1/2 hour or max 2 hours,.
-NOTE: leaving the dough in warm place will let it rise soon ,thus making the bons suppler. (soft)
-after it has risen , get it on the work surface , punch out all air , and make it into a round shape 
as u do for big rotis, the thickness as to be 1/4 th .
-now in another bowl add the brown sugar & cinnamon together (u could add lil' of vanilla powder if u r a big fan of vanilla ;-) like me.)
-mix and keep aside 
- now apply butter to the big round shape rolled disk and sprinkle the sugar mixture evenly on it.
- slowly start rolling it just like a log , (check the pic above ) 
- now., cut the log into 12- 15 pcs ,.
-bake in preheated oven 200* for 10 -12 mins.
-let it cool ., and voila .......its ready 
have it just plain , or with any choice of ur favt glaze, (hazelnut , nutella, white chocolate, strawberry, chocolate,etc..)

lemony salmon with homemade mash potatoes! 
this is the 1st dish i made to start my cooking (world)  

ingredients: for lemony salmon 
-salmon - 1 pc (any size ) 
-lemon juice of -1 lemon (use green lemon )they have more juice
- black pepper -about 1/2 tsp 
-olive oil to marinate - 2-3 tbsp 
-salt to taste (about 1/2 tsp) 
-vinegar - 1/2 tsp 
-oil for grilling ( about 3-4 tbsp)
METHOD: - just marinate the salmon with all the above ingredients , and keep it in refrigerator for atleast 1/2 hour to 1 hour , 
-remove and grill it on griller for 2-3 mins 1 side , flip the other side and and let it cook for another 3 mins ... note: dont keep fliping the fish too much .
- serve with fresh lettuce and mashed potatoes 
 
FOR HOME MADE MASH POTATOES 
- potatoes - 2 med size (boiled and mashed )
-salt to taste
-black pepper - 1/4 tsp 
-milk - 1/4 cup 
garlic powder (optional) 1/4 tsp  

method:
-just boil the potatoes, and mash them  ,
- let it cool ,after cooling beat them with a blender 
- in a saucepan  add the milk and heat it , now add the beaten  mashed potatoes, salt, pepper, and garlic powder , cook it till dry consistency.,
